The heart of Scotland’s capital is dramatic Edinburgh Castle, which overlooks the city’s rooftops and large green spaces. To the castle’s south lies medieval Old Town; further south sits New Town, the city’s business center and shopping district. The cuisine may not be spectacular here—unless you’re a fan of haggis (a frightening mixture of sheep parts)—and the weather seems perpetually damp. But Edinburgh’s warm locals and cosmopolitan sensibility quite rightly inspire U.K. travelers to look beyond London.
