The old agricultural town of Consuegra is famous for two things: its long row of typical La Mancha windmills on a ridge above the rooftops, and its annual Saffron Festival. The violet flower of the saffron blossoms only briefly in October. The flowers are harvested by hand before the "mondadoras" or petal-strippers separate the stigmas from the rest of the flower, to be toasted. La Mancha Saffron is the most expensive spice in the world and without it, Spanish Paella would not be the same. The "Festival de la Rosa del Azafran", still an authentic folk festival, features competitions for the fastest, most dextrous stripping of the flower. There is a festive atmosphere in the town with music, food and drink to celebrate the occasion
