Countrywide,
Israel
Celebrated on the 15th day of the Jewish month of Shevat (January or February), the day marks the age of trees for tithing. According to the Torah, fruit grown on the trees in Israel can not be eaten until they are five years old; during their first three years of life, no one eats the fruit and during the fourth year, the fruit is offered to god. At Tu b'Shvat, it is customary to feast upon fruits from trees grown in Israel that are over four years old.
