Chef Jean Soulard was the first Canadian to receive the prestigious Maître Cuisinier de France award. Using regional foods and his rooftop herb garden, he creates dishes such as fresh scallops from the Îles de la Madeleine with honey and spices, and pheasant supreme with truffle and pomegranate sauce. Incongruously for such an upscale restaurant, the servers wear tourist-pleasing period costumes. Tall windows overlook the St. Lawrence River. The restaurant also serves a decadent Sunday brunch and an Old-Fashioned Tea" (Monday to Saturday, 1:30-3:30). "
